A rainy kind of a day...

The rain has kept me inside today, so baking and craft kept me busy while Babe decided to sleep 3hrs!
I have been fiddling with recipe for a while, thought the blog was a reason to put it in writing.
I do almost everything in the Thermomix, but a processor or hand beaters will do fine, just take a few more mins.

Chocolate and Caramel Cupcakes (TMX version)
Cake Mix
125g butter
150g caster sugar
2 eggs
1 tsp vanilla extract
200g self-raising flour
50g cocoa powder
185ml milk

Mix the butter and sugar until well creamed, add the rest of the ingredients and mix on sp5 for 30sec.
Spoon in to 12 papercases and bake at 180deg for 20mins.

Caramel topping

1 can Condensed milk
1tblsp Golden Syrup
40gr Butter

Place all in the TMX and cook for 10mins/sp1/90deg, poor out in to a dish and cool before spreading on cool cakes.

Scoff with a cuppa before kids get them.

Some more stitching up on the patch blanket, its literally coming together now, although it looks like i will have some more pieces to make to fit in the gaps before i can think about yarn for the boarder.

Hmm, looks better IRL than in the photo... shame.

Now off to look for inspiration for dinner.
